1. Amritsari Kulcha
This is a legendary North Indian stuffed flatbread, famous for its multi-layered, crispy crust and spicy potato filling.
Ingredients
- Dough: 2 cups Maida, 1 tsp Sugar, ½ tsp Salt, ¼ tsp Baking Soda, 2 tbsp Ghee, ½ cup Yogurt.
- Potato Stuffing: 3 Boiled Potatoes (mashed), 1 Onion (chopped), Green Chilies, Ginger, Anardana powder, Chaat Masala, and Fresh Coriander.
Quick Steps
- Knead a soft dough and let it rest for 30 minutes.
- Roll out dough, apply ghee/flour, and fold into layers (Lacha style).
- Stuff with the potato mixture and seal tightly.
- Roll gently, apply water on one side, and stick to a hot tawa.
- Invert the tawa over the direct gas flame to get the tandoori char.
2. Tandoori Paratha
A rustic, whole-wheat paratha made with a unique technique to mimic a clay oven (tandoor) at home.
Ingredients
- 2 cups Whole Wheat Flour (Atta)
- 1 tbsp Ghee
- Pinch of Salt and Water
Quick Steps
- Make a firm dough and rest for 20 minutes.
- Roll into a thick circle (or layer it like a fan for Lacha Paratha).
- Cook on a cast iron tawa using the “water-sticking” method.
- Roast on direct fire until golden brown and crispy.
